Tender Shortening Pie Crust Recipe
Some of my favorite desserts and treats are homemade pies. What makes a great pie? A tender crust that melts in your mouth, but one that’s also strong enough to hold whatever delicious pie filling you put into it. That’s what this tender shortening pie crust does. I hope you try the recipe.
Tender Shortening Pie Crust
Ingredients
- 3/4 cup shortening, put in freezer to chill
- 2 cups all-purpose flour
- 1 tsp salt
- 4 to 7 Tbsp iced water
Instructions
- Be sure your shortening is ice cold and somewhat solid before removing from the freezer.
- Be sure you have ice cold water. If you don’t have ice cubes, put a big bowl of water in the freezer or refrigerator.
- Also, be sure your bowl and pastry cutter are cold.
- When you’re ready to begin, sift the flour and salt together into the bowl. If you have a sifter, that’s fine, but if you don’t just put the flour and salt through a fine metal sieve over the bowl.
- Cut up the frozen shortening into small cubes, then immediately add to the flour and quickly cut the shortening into the flour using a pastry cutter or a couple forks. Do this quickly so shortening stays frozen.
- The mixture should be crumbly and have a pebble-like texture, but not too fine. You want to see some variation in the texture and actually still see a bit of shortening. Don’t over blend.
- Start adding the ice cold water, first the least amount, stir and add more as needed until you can easily coax the crumbly mixture into a dough by pinching it in your fingers.
- Divide the dough in half and loosely form a ball with each, flattening them out about an inch or so thick into a disc, and wrapping them both in plastic food wrap. Refrigerate for 30 minutes to 1 hour before rolling out.
- Makes 2 pie crusts.
This recipe is perfect for this easy pumpkin pie recipe. You’ll get two pie crusts, enough to make not one, but two pumpkin pies. Eat one and give the other away. Freeze the second pie for later. Or eat them both.
