Flaky Pie Crust Recipe
Is there anything better than a flaky pie crust? If you’re in the mood to bake a pie, give this simple recipe a try. The key is minimal ingredients and as little handling as possible. I’ve tried to make the directions as clear as possible. Give it a try, but like with other “simple” recipes like biscuits for example, it takes some practice to get it just right. The good news is that you’ll end up with some yummy pies while you work on perfecting your homemade pie crust making technique.
Flaky Pie Crust
Ingredients
- 2/3 cup butter, diced small and put in freezer
- 2 cups all-purpose flour
- 1/4 tsp salt
- 3 to 5 Tbsp iced water
Instructions
- First things first; be sure you have your butter cut up and in freezer about 20 to 30 minutes before you start.
- Make sure you have ice cubes for the ice water. If you don’t have ice cubes, put a big mug of water in the freezer when you put the butter in.
- Also make sure your bowl and pastry cutter or somewhat cold; not right out of the dishwasher, for instance.
- When you’re ready to start, get out your bowl and a sifter or fine mesh strainer.
- Sift the flour and salt through the sifter or strainer over your bowl.
- Take the butter out of the freezer and dump into the flour/salt.
- With pastry cutter, cut the butter quickly into the flour until you have a pebbly texture. You should still be able to see small pieces of butter.
- Drizzle in 3 tablespoons of ice cold water and start stirring together, adding more ice cold water until the mixture sticks together when pressed between your fingers and will form a dough ball. (Add the least amount of water you can that allows the dough to stick together, no more.)
- Split the dough in half and quickly shape each into a ball, patting them flat to about a 1 inch thick disc. Don’t over handle so your hands don’t warm up the dough. Then wrap each in plastic wrap and refrigerate for 30 minutes to 1 hour before rolling out.
- Makes 2 pie crusts.
