Chicken Enchiladas – Budget-Friendly Recipe

These creamy chicken enchiladas are a weeknight dinner staple at our house. I often make them when we have leftover chicken from another meal. Okay, confession time … I buy and cook extra chicken when it’s on sale to have for additional meals, including this chicken enchilada bake.

I love that I’m able to put these together quickly with leftover cooked chicken. Another great recipe for that is this curried chicken recipe. Or get a little fancy with chicken ala king. And of course there’s the always popular chicken salad.
