Sunshine Pudding

There was a recipe that my mom made. It was custard-y, and it was made with orange Kool-Aid,orange juice and sweet potatoes and carrots.I believe it was called ” Sunshine Pudding,” and it was in a diet cookbook. I cannot find it anywhere.Can you help?

This is a great childhood memory for me,and my mom made it knowing I hated carrots and sweet potatoes and I would put a dollop (or three đŸ˜‰ ) of Cool-Whip on it and eat it right up.

I couldn’t find the exact recipe you were looking for. I did find a sweet potato and carrot custard that comes close though. Let’s see if HBHW readers have better luck. Of course you could give the recipe below a try and add a packet of Orange Kool Aid to see if that does the trick. I’m sure it would add to the yummy orange flavor of the custard.

Sweet Potato & Carrot Custard 

  • 1 large sweet potato
  • 2 large carrots
  • 2 tbsp butter
  • dash of salt
  • 2 eggs
  • 1/4 cup orange juice
  • 2 tbsp sugar
  • 1 tsp ground cinnamon
  • dash of allspice

Preheat oven to 350 degrees. Peel the sweet potatoes and carrots and cut them into chunks. Put them in a baking dish, sprinkle with salt and dot with the butter. Cover and bake for 30 to 40 minutes or until the vegetables are softened.

Put the vegetable into a food processor, or mash them in a bowl with a fork or pastry blender. Add the orange juice as you blend or mash. Once you have a puree, add the eggs one at a time and blend until well mixed in.

Finally, add the sugar and spices and pour the custard into a buttered baking dish. Bake for 30 minutes or until set.
