Homemade Spanish Rice

  • 2 tbsp oil
  • 2 tbsp onion (chopped)
  • 1 ½ cups white rice
  • 2 cups chicken broth
  • 1 cup chunky salsa

Get a large frying pan and heat the oil in it first. Next add the onion and
cook until they are fork tender.

Add rice to onions and stir it around
until the rice starts to brown. Pour chicken broth and salsa over the rice.

Cover the pan and let it simmer for about 20 minutes so that is can soak up all of the juices.

*Tip: This always goes well with any
Mexican dish but it also goes well with
grilled chicken, pork or steak!
