Healthy Broccoli Salad
Put together in a large bowl:
- 2 heads of broccoli steamed 1-2 minutes and cooled to room temperature
- 1/3 c dried cranberries
- 1/2 c cashews
- 1/4 small red onion diced
- 4 T real bacon bits
Whisk together in separate bowl:
- 1/4 c Splenda (or white sugar),
- 2 T cider vinegar,
- 2/3 c Greek yogurt,
- 1/3 c mayonnaise
Pour dressing over broccoli mix; toss to combine.
