Kale and White Bean Soup

Kale is one of my go-to greens throughout winter and early spring. You can grow it in the garden, in a pot on the patio, or buy it at your favorite grocery store or farmer’s market. Kale is considered a superfood. Combined with the fiber and protein from the beans, this kale and white bean soup makes for a healthy lunch or dinner.

To serve this for dinner, add a slice of crusty homemade bread. The soup stores well and tastes even better reheated the next day.

My thanks go to my friend Carrie for this wonderful kale and white bean soup recipe. It’s become a winter staple around here since she shared it with me many years ago. I’m not usually a huge fan of white beans, but combined with the kale, you get an amazing, rich flavor. This is pure comfort food on a cold day.

We grow our own kale in the garden each year. Here in the south it does best in the late fall. I’m able to harvest through most of the winter and into spring. Bonnie Plants has a great article on planting and growing kale.
