Instant Pot Creamed Corn Recipe

I don’t know about you, but I can use all the help I can get cooking around the holidays. If you’re making a lot of the traditional dishes from scratch, every burner on your stove will be in use and you have a timetable for what goes in the oven when. Thanksgiving and Christmas Day, my oven often runs from the time I get up to the moment we sit down to eat. That’s why I’m always on the lookout for good recipes – like this instant pot creamed corn recipe –  to create some of our favorite dishes in the slow cooker and of course in my new favorite the Instant Pot. These types of recipes also come in handy when you’re traveling. You can take your pot with you to grandma’s house and contribute to the family meal without getting in the way.

Instant Pot Creamed Corn

Ingredients

  • 2 small bags frozen corn
  • 1 block cream cheese
  • 1/2 cup of heavy cream
  • 1/2 stick of butter
  • 1tbs sugar
  • 2tbs sour cream
  • 1tbs cornstarch
  • Salt and pepper to taste

Mixe the frozen corn, cream cheese, heavy cream, butter, and sugar in the instant pot.

Cook the corn on high pressure for 5 minutes. Do a quick release. Be careful and let some of the steam out in short little bursts to keep the corn mixture from blowing out.

Mix the sour cream and cornstarch in a small bowl and add the mixture to the corn. Stir until well combined and season with salt and pepper to taste.
