Green Chili and Cheese Breakfast Casserole

Is there anything better than a nice breakfast casserole on cold Sunday morning? Here’s a new recipe I’ve been playing with that has some fun Southwestern flavors. The casserole is easy to put together and can sit in the fridge overnight. You just bake it while enjoying your first cup of coffee and by the time everyone’s crawled out of bed on Sunday, breakfast is ready.

This also makes a great weekday dinner. Just assemble it in the morning, stick it in the fridge and bake when you get home. Add a side salad and dinner is served.

Chili Cheese Breakfast Casserole

Ingredients
  • 6 slices bread with crust removed
  • 1 pound sausage
  • 4 cups Colby Jack cheese
  • 6 eggs
  • 2 cans green chilies
  • 2 cups half and half
  • 1 teaspoon mustard, dry
  • 1 teaspoon salt
  • Picante sauce
Instructions
  1. In a 9×13 inch baking dish, place lightly buttered (on both sides) bread.
  2. In a large skillet, brown the sausage and drain well.
  3. Sprinkle the sausage as evenly as possible over bread slices – make sure bread is covered. Sprinkle the cheese over the sausage layer and then place green chilies over the cheese.
  4. Beat the eggs in a medium sized mixing bowl and then add in the half-and-half, mustard and salt.
  5. Once mixed thoroughly pour over the casserole and cover with tin foil and place in the refrigerator overnight.
  6. To prepare: Preheat oven to 350 degrees.
  7. Bake for 45 minutes or until the casserole is bubbly. Let stand for 15 minutes and then serve with Picante sauce.

The directions above outline how to make the casserole the night before and then bake it the next morning. This is my favorite way to do things. If you want to do everything in the morning, just start by preheating the oven, assemble your casserole and bake it right away.
