I am looking for recipes to repurpose all of my WIC cereal. Especially dinner recipes. Kix, cherrios, cornflakes, grapenuts, grapenut flakes, multigrain cherrios, rice crispies, chex, special K.

    The only thing I have used cereal for besides snack mixes and deserts is using crushed cereal for breading on meats or as a filler in meatloaf. This is very good as a breading for chicken and pork. Dip the meat in beaten egg then roll in the crushed cereal and place in baking dish that has a little canola or olive oil in it. Place in the oven, it sort of “oven fries” the meat. Can also add some chunked potatoes. Very yummy and less fat than actually frying on top of the stove. Use in meatloaf in place of bread crumbs.

    Rice Krispies, MG Cheerios, and Kix can of course be used to make the RK Treats w/ marsshmallows and margarine.

    Crush plain Cheerios, GN Flakes, cornflakes, Special K and crispix and use instead of bread crumbs when making meatballs, salisbury steak,or meatloaf. Being fortified w/ vits/mins this s healthier than plain Italian bread crumbs! They woudl also be good crushed, mixed w/ a little melted butter, maybe a bit of grated parmesan cheese, and used as a topping on casseroles (instead of crushed crackers).

    I think I would crush some of any of those cereals (except grape nuts… that’s a toughie!) and use instead of flour (up to half ot total amount of flour) in waffle, pancake, or muffin batter.

    One of our kids favorite things to do for a snack is to fill a baggie with different types of cereal and then throw in some raisins, nuts, whatever little bits of stuff you have in the cabinet. Of course for dinner you can always use cornflakes, and even grape nuts (crushed) for coating meat. Also, I bet the multigrain Cheerios might be good in a big summer salad with some mandarin oranges.

    Susan, cold cereal is a classic “stretcher” for meat. You can crush it into crumbs and add it to any ground-meat recipe like meatloaf, meatballs, salsbury steak, ect., to absorb some of the juices and make the batch bigger. You can also use them (crushed but not crumbed) as an au gratin topping on casseroles.

    I would suggest finding some depression- or War-era cookbooks, they have tons of recipes WIC foods would be good for. I got mine from my grandma’s generation, but you could probably find them at garage sales, thrift stores or antique stores, or the library if they haven’t winnowed their stacks down too much.

    You can use the rice krispies in rice krispy treats. use the flake type cereals & cheerios crushed as a coating for chicken and fish. Bake as you would a shake & bake type coated piece of meat.

    A few years ago I was given a bunch of the WIC ceareal most of which happened to be the chex stuff in various forms ie:corn wheat and rice which I made Chex Mix and gave it away for Christmas. Many of the websites for the brand name cereals of the types you have mentioned have recipes for using their products in different ways like grapenuts pudding and bran flake muffins etc. You might try that.

    This is not a dinner recipe, but it is a family favorite. You could use any cereal except maybe the grapenuts, but I always use the corn flakes. It is very easy to make.

    Peanut Butter Crackles
    1 c. brown sugar
    1 c. white sugar
    1 c. light corn syrup
    2 tsp. vanilla
    1 1/2 c. peanut butter
    5 c. corn flakes
    Melt the sugars and syrup together over med. heat. Add vanilla and peanut butter, stirring until melted. Remove from heat and add corn flakes. Drop by spoonfuls onto wax paper. Cool.

    Another favourite in our B&B is French Toast that is dipped per usual (milk, egg, vanilla, sugar, salt) and then breaded in cornflakes you’ve run through the food processor for a few seconds.
    Texas toast works best and the French Toast comes out absolutely delicious with a really crunchy coating and moist sweet centre. Enjoy!!

    don’t forget you can get oatmeal on wic. oatmeal is the healthies most filling cereal you can get on wic you can add it to cookie muffins pancakes waffles baked oatmeal . to me oatmeal is the best thing to put in meatloaf or meatballs. other than that i agree with the others bout using any cereal to make cereal bars by adding melted marshmellows don’t forget to be creative with these add peanututter, raisins cinnimon chocolate chips fruit anything your family like. chex mix type snacks can be made out of anywic cereal. and of course use them as breading for meats. or just eat the cereal with milk. i use to buy coco krispies and mix them with rice krispies cause my kids wouldn’t eat the rice krispies plain. we mix different cereals all the time.

      Oatmeal is in a different category then my cereal in my state it is grouped with my bread/rice not cereal :( I use the 2 loafs of bread I get so I can’t get oatmeal agh. :(

    I sure wished I found this website when I lived in the states and was recieving my WIC! I live back home in Canada now and we don’t get things like WIC here! But I will def use some of these ideas for cheaper alternatives to boxed meat breading and such. The only thing I won’t change that I do already is I used Veggie Thin crackers for my meatloaf filler! They are flavorful enough I don’t need to add much more seasoning if any more at all! Cept my secret ingredients! 😉

    You might want to check your state wic website. Sometimes they will have a section on recipes using wic foods. Also, your local nutritionist should be able to print you off some or point you to some additional sites. The national wic association’s site, http://www.nwica.org has some links on the right hand side called business council partners. If you click on the brands of cereal companies listed, the individual sites will give recipes using that brand. Hope this helps!

    Also, you can use the cereal in fruit and yogurt parfaits. YUM!

    Hi! May I add to the comment about oatmeal? Sometimes we whiz the oatmeal in the food processor until it is a flour-like consistency and add it with flour to make muffins, or Hillbilly Housewife pancakes or whatever I’m using flour for. For example, if the recipe calls for 2 cups of flour, I may use a cup and a half of flour and 1/2 cut of “oat flour”. Or what ever works for you. So far – no complaints or odd tasting food. If you don’t have oats, perhaps this would work with the grapenuts? Wish you the best =)

    I’m always looking for and compiling new things to do with WIC foods. I’m not only a WIC participant but I’m also a lactation counselor for WIC! One of my favs is Grapenut pudding http://www.yankeemagazine.com/recipes/search/onerecipe.php?number=640. We used to love this one before our family went gluten free. Other things we love are cornflake chicken (coat chicken in mayonnaise and then in crushed cornflakes and bake), Chex mix, Oatmeal can be used instead of breadcrumbs (just run it through the food processor), and the oatmeal is a great sub for flour too. Stick Rice Crispies in granola bars for extra crunch and special K can make great Christmas cookies (make rice crispie treats and add green food coloring. Shape into trees or wreaths and add red cinnamon candies for holly berries. A little creativity can go a long way!

    I’ve used Rice Crispies in cookie recipes instead of nuts with good results. With so many people having nut allergies, this is a good substitute for items for bake sales, etc. – even for afternoon snacks when you’re not sure about what some of your kids’ friends can safely enjoy. In addition, the cereal is less expensive than nuts, and lower in fat.

    I found this in a Make A Mix cookbook. It is like Shake n Bake.
    4 t dried parsley 3 c cornflakes crumbs, ~ 8 c cereal
    1 T paprika 2 t salt
    1 t dry mustard 1 t onion powder
    1 t celery salt 1/2 t ground pepper
    Combine all ingredients and store in a cool dry place in an air tight container. Use within 2 months. Makes about 4 1/2 cups coating. Good for pork, chicken or fish
    I have used this with and without an egg coating. Either way is fine, but it does stick a little better with the egg coating prior to shaking then baking. My husband, who loves shake n bake pork cutlets, says this is a good substitute!

    This is not a main dish but we put Grapenuts on ice cream to add crunch and fiber. We also use the cornflakes as toppings for casseroles.

    Hasbrown casserole (from what I remember, you might get a more accurate recipe online somewhere)
    1 pkg frozen hashbrowns (diced)
    1 stick butter
    2 cans cream of mushroom soup
    8 oz. pkg cheddar cheese
    (cornflakes for end of recipe)
    mix all items except cornflakes in a greased pan. Cook (350?) until bubbly, usually 30 minutes or so. There will be a layer of grease on the top. Put cornflakes on top and press down to absorb grease. Cook an additional 10 minutes. We used to serve this a side dish, but we now eat it as a main dish with green beans, and maybe fruit.

    My sister melts marshmallows and butter like you would to make rice crispies treats, but she uses cheerios instead. Her boys love it.
    My kids like it with cornflakes.

    I read that mixing corn chex and broken pretzel sticks with melted chocolate chips is good. The directions said to mix and then form small mounds on waxed paper to cool. Drizzle with melted peanut butter if desired.
    It seems to me that a lot of different cereals would work with this recipe. I’d even break up a graham cracker or two to add to the mix.

    Put any of these cereals in the dough when you’re making bread. This works for grapenuts as well. Adjust the liquid in the recipe accordingly.

    Use any of these, including the grapenuts, as the filler for meatloaf. It adds fiber & nutrition & flavor. Add any of them to muffins for extra texture.

    Any of them can be crushed or blended until they’re like flour and added to smoothies or cakes or any baked goods for extra nutrition & fiber.

    Grapenuts is also good as a hot cereal.

    WIC CEREAL’s are supposed to be used to improve the nutrition of new mom’s and children under age 5. If you do not NEED the cereal for the intended purposes, ask the WIC office to give you less.

    @Linda: When I asked the WIC office why they gave us SO MUCH cereal, they said its because of the lack of iron in most children’s blood levels. In GA, we get 6-9 boxes per child per month. I’m sorry, my 18 month old and 3 year old eat LOTS of cereal, but they don’t go through THAT much.

    @Linda: I have spoken to my local WIC office and they suggest using extra cereals in other recipes INCLUDING chex mixes, krispie treats, and with meats for coating or adding as filler. Using cornflakes and other cereals with meats rather than regular bread crumbs DOES improve the nutrition of the new mom and children. As does using regular crisp rice or cheerios for krispie treats rather than rice krispies, which have more added sugars.

    @Beth: I’m in CA and we only get 36 ounces of cereal, but that is still plenty!
