Sweet and Sour Lentils

1 cup lentils
2 1/2 cups water
2 beef bouillion cubes
1 bay leaf
cook above until tender and then add:
1/4 cup apple or pineapple juice
1/4 cup apple cider vinegar
1/4 cup brown sugar
1 clove garlic crushed
sauteed onions if desired
heat to bubbly, serve over brown or white rice

Sounds interesting. I’m actually going to give this one a try - adding sauteed onion, celery, red bell pepper & mushroom. We’ll see how it goes.

I tweaked the recipe a bit to suit my taste. Also, I used small white beans instead of lentils because that’s what I had. I used a bit more sugar & pineapple juice than what was called for & didn’t used all of the mixture. With the sauteed onions, red bell pepper, celery & mushrooms it was actually quite good. Even my finicky husband liked it (he’s not fond of beans in any form so it’s nice to find some way to incorporate them into dinner without him complaining. Don’t get me wrong, he was still skeptical - ’til he tried it.)
