- 2 cups leftover cooked rice
- 1 cup milk
- 1 tablespoon margarine
- 1/4 cup raisins or dates (optional)
- dash salt
- dash cinnamon
In a medium sized saucepan combine the rice, milk, margarine, raisins or dates and salt. Add the raisins too, if you are using them. Stir the mixture over medium heat until it is heated through, and the margarine is melted. Simmer for a minute or two to thicken. Serve immediately, while it is hot.
This recipe is a great way to reheat leftover rice, especially if you don’t have a microwave. The rice will absorb some of the milk as it heats. If you like, you can pass a pitcher of cold milk or cream at the table to thin it out some. This recipe will serve 4 moderately hungry people, or 2 starving adults. It is easily doubled for more servings.
Cooked wheat or bulgur may replace the rice if desired.

This reminds me of when I was a kid. My mom and I used to eat this rice cereal for breakfast, with the leftover rice from stir fry the night before. I still have this everytime there is leftover rice in my frige. I do usually just heat it in the microwave though. Thanks for sharing an old favorite.
I was very hesitant to try this on my kids (picky 8yo and toddler), and myself for that matter- rice and milk?!? But, I had leftover brown rice from fish last night and gave it a try. They LOVED it! My toddler had a second helping, which he NEVER does of ANYTHING. I did add just a smidge of sucanat (brown sugar). It was heavenly. And to think of all that rice I’ve let go bad in the past and had to throw out because I just didn’t know what to do with it! A definate keeper!!
I was out of raisins but had some cherry flavored craisins. These were delicious and a nice change with the rice for breakfast.
I reheat rice with reconstituted nonfat dry milk in the microwave. I season it with a little stevia powder and sprinkle it with nutmeg and pretend it’s rice pudding
It’s great for breakfast.
I remember my mother before she left the house to teach school in Kentucky she made us rice cereal, it was similar to this but I can remember her cooking the rice in water and sugar I believe it was and raisins. She made this on top of the stove and I put it in a bowl and added milk to cool it off. Does anyone have this recipe? My mother is deceased and I didn’t get her recipes I am sad to say. I would give anything to have a bowl of this through my surgeries the past two years going on 3rd year. Sometimes I can’t eat anything but pudding, yogurt, etc…and I am sick of those so rice cereal like my Mom made would be wonderful!!
I add handful of cranberries with the milk and butter for a great rice snack or cereal
