Homemade Yellow Or White Cake Mix

I am looking for a homemade yellow or white cake mix recipe that I can store on the pantry shelf for later use in recipes that call for a mix. Thanks.

    White Cake Mix

    2 1/2 Cups all purpose flour
    1/3 Cup powdered milk
    1 Tbs. baking powder
    3/4 tsp. salt
    1 1/2 Cups white granulated sugar
    Mix well then cut in with pastry blender or 2 knives:
    1/2 Cup plus 1 Tbs vegetable shortening

    Place in jar or ziplock baggie and store at room temp. Will keep up to 3 months. Make up several batches to have on hand and label each one with the following directions:

    To Prepare:
    place one bag or jar of mix in large mixing bowl
    Add:
    3 Egg whites (if you want a yellow cake add the whole eggs)
    1 Cup water
    1 tsp. Vanilla extract

    Mix well with electric mixer. Pour batter in a greased and floured 9″X13″ pan or 2 8″ round pns. Bake @ 350 degrees for 25-30 Min for the 9″X13″ pan or 18-20 Min for 2 8″ round pans.

    Basic Cake Mix
    8 cups all-purpose flour
    5 cups sugar
    1/4 cup baking powder
    1 tablespoon salt
    2 cups shortening (that does not require refrigeration)
    In a large bowl stir together the flour, sugar, baking powder,
    and salt. With pastry blender cut in shortening till mixture resembles very fine crumbs. Divide mix into five equal portions (about 3 1/3 cups each).
    Place in airtight containers; label. Store in a cool, dry place up
    to six weeks. Or place in freezer containers and freeze for up to 6
    months.
    Feathery Yellow Cake
    1 pouch of cake mix
    3/4 cup of milk
    2 eggs
    1 teaspoon vanilla
    Grease and flour two 8×11/2 round cake pans Set aside. In mixing
    bowl combine the mix and the milk. Beat at low speed of electric mixer till moistened. Beat 1 minute at medium speed. Add eggs and vanilla. Beat 2 minutes at medium speed. Spread batter evenly in prepared pans. Bake in 350 degree oven about 20 minutes or till wooden pick comes out clean. Cool pans for 10 minutes and remove cake to cool completely.

    Hi, we like to do cake in a jar for holiday gifts. This make 3 jars of mix or 2 cakes. We make the mix ourselves, so I am thinking this would be easy enough to just make regular cake with. I have adapted it for you. I hope it helps.
    Here it is:

    Make Your Own White Cake Mix

    2 1/3 cups all-purpose flour
    1/3 cup nonfat dry milk
    3 teaspoons baking powder
    3/4 teaspoon salt
    1 1/2 cups white sugar
    1/2 cup plus 1 tablespoon shortening

    Preheat oven to 350F.
    Grease and flour a 9×13 inch cake pan

    White Cake:
    3 egg whites
    1 cup water
    1 teaspoon vanilla extract
    1 1/2 c of the mix
    Combine all in a bowl, mixing well, pour into 9×13 greased pan.
    Bake for 25-30 minutes. Cool & Frost as desired.

    Oh, one little thing I should have put on there is to use a fork and break up the shortening. Work it in until it looks kinda grainy like corn meal.

    There’s a great book that I think might be out of print now called Make Your Own Groceries and it has a recipes for making your own cake mixes. You might be able to find it on half.com or some similar site.

    A friend shared this with me and I have tried it and is so good. Her family was camping and her husband wanted a cake, but they didn’t have anything to make the cake with but the mix.

    Use 1 cake mix and 1 can of Mountain Dew. This is the most moist cake you will ever eat.

    If you want to add some flavor use 1 can cherry coke.
