I have searched the net without any luck. Then I found your site and quit searching….I have to come back when I have time to lurk.

I am looking for an instant coffee mix, Cafe Francais. It’s so expensive to buy the mix and I thought you or one of your readers could help me. Thank you in advance, Elaine

How To Season and Re-Season Cast Iron Cookware

The following is a small excerpt from “The Hillbilly Housewife’s Cast Iron Cookbook“. This coating fills in all […]

I have been trying to make my own Cafe Francais with no luck. But I have a can and I’m going to list the ingredients exactly as they come off the can. Maybe you can try to make a mix that tastes like it. I hope so!

Ingredients: Nondairy Creamer (Corn Syrup Solids, Partially Hydrogenated Coconut Oil, Sodium Caseinate (From Milk), Dipotassium Phosphate, Mono- and Diglycerides, Artificial Flavor), Sugar, Instant Coffee, Maltodextrin, Sodium Citrate.

I know you didn’t need all of that, but wanted to include it just in case. I don’t taste any Chocolate or Vanilla flavors in it. I’ve made batches using nonfat dairy milk & / or creamer, sugar (various types) and instant coffee. I have blended it in a food processor and by hand. But haven’t really got close to the flavor. Hope you can help. Thanks!

I happened to stumble upon this post, and because I make my own instant coffee mixes all the time, I thought I could help. I’ve not been able to find a recipe for a Cafe Francais mix, I’ve found many recipes for the drink itself. It seems that the flavors, besides a good French roast coffee, are just heavy cream, vanilla and confectioner’s sugar. You’d have to experiment to get the proportions right, but you could easily duplicate it at home. Good luck!

I have a recipe for Viennese Mocha Coffee Mix. I don’t know where I got it and have had it for over 25 years. I make it every year for Christmas gifts along with other homemade goodies and everyone that gets it loves it. So here it is:

    1 Cup nonfat dry milk
    1/2 cup sugar
1/4 cup instant coffee powder or granules
    2 tablespoons unsweetened cocoa powder
    1/4 teaspoon ground cinnamon
miniature marshmallows or whipped cream (optional)

Place dry milk, sugar, coffee powder, cocoa powder and cinnamon in a blender container. Cover and blend until very fine. Store in airtight container in cool place. Use 2 to 3 tablespoons of the mixture for each cup of boiling water and stir well. Top with marshmallows ro whipped cream if desired.
