- 1 pound ground beef
- 1 15-ounce can pinto beans drained
(or cook them from dry beans ahead of
time)
- 1 10-ounce can mild enchilada sauce
- 1 8-ounce can tomato sauce
- 1 cup American cheese shredded
- 1 tablespoon dried minced onion
- 1 cup water
- 4 cups corn chips
- 1 cup sour cream
- 1/2 cup American cheese shredded
Get out your favorite skillet and brown the
ground beef. If you'd like, season it
lightly with salt and pepper. Drain off any
fat floating around, then pour the browned
beef into your crock pot.
Stir in beans, enchilada sauce, tomato
sauce, 1 cup of cheese, onion and 1 cup of
water. Set 1 cup of corn chips aside, then
crush the remaining chips and add them to
the meat mixture.
Cover your crock pot and cook the mixture on
low for 8 to 10 hours. When it's all done,
pour a cup of the mixture into each bowl and
top it with sour cream, some cheese and a
few corn chips.
