Greek Herbal Dressing

  • 1/2 cup vegetable oil
  • 1/4 cup red wine or plain vinegar
  • 1/2 teaspoon EACH: onion powder, Worcestershire Sauce, dry mustard, basil, and oregano
  • 1 tablespoon EACH: Parmesan cheese, sugar or honey, and lemon juice
  • 2 teaspoons salt
  • 1/16 teaspoon pepper

This recipe has a lot of ingredients, but most of them are seasonings, so it really is very little extra work to measure them all into a jar, or cruet. I use plain white vinegar when making this recipe because it is most available to me. If you had red wine vinegar around the house somewhere, it would be more regionally authentic, and give the dressing a slightly different flavor. If you don't have any lemon juice, just add another tablespoon of vinegar, or you could just omit it completely, and it won't make that much difference in the finished product. To make this recipe, combine all the ingredients in a pint size canning jar and shake to combine. It's that easy. 

I like this recipe for marinated vegetable and pasta salads, and also for marinated salads which include veggie-turkey. The strong tartness of this recipe makes it perfect for strong flavors like tuna.
