Cajun Pork Roast

  • 2 pounds pork loin roast
  • 3 tablespoons paprika
  • 1/2 tablespoon cayenne pepper
  • 1 tablespoon garlic powder
  • 2 teaspoons oregano
  • 2 teaspoons thyme
  • 1/8 teaspoon salt
  • 1/2 teaspoon ground white peppers
  • 1/2 teaspoon cumin
  • 1/4 teaspoon nutmeg

Get out a small bowl and combine all the spice in it. Take this rub and rub it all over your roast. Take your time with this and make sure you get the seasonings all over the meat.

Put the roast into a roasting pan (a large casserole dish will also work) and bake it at 350 degrees for about an hour. If you have a meat thermometer, check and make sure the internal temperature is 155 - 160 degrees.

Let the roast rest on a cutting board for at least 10 minutes. Slice the pork and serve it with hot cooked rice.
