Zucchini Cakes

  • 1 shredded small zucchini
  • 1 pouch (6.5) cornmeal
  • 1 large egg
  • 1/2 cup milk

Microwave zucchini in glass bowl 2 minutes on medium high, then drain. (Editor’s note: you can also cook in saucepan in a small amount of water until soft, then drain.)

Combine in a bowl, the cooked zucchini, cornmeal, egg, and milk, and let it stand 5 minutes.

Heat oil in large heavy skillet.  Drop heaping Tablespoons of batter into hot oil. Cook 1 1/2 to 2 minutes each side
Drain on papertowels and salt immediately while still hot.

Makes about 14 cakes.

    This sounds yummy, and the garden is producing zucchini like crazy, but how much cornmeal is in one pouch, or what does 6.5 mean? Thanks.

    I also am wondering what you mean by a “pouch” of cornmeal? My cornmeal comes either in a 5# bag or a @3 cardboard can. Are you talking about a cornmeal bread or muffin mix perhaps?

    I have never saw a pouch of corn meal……………now I have saw pouches of corn muffing mix or corn bread mix in stores. So do we use corn muffin mix or corn bread mix in a pouch or do we measure out approximately 6 ounces of corn meal? I am not clear on this.
