Vegetarain Gluten-free Recipes

I have been trying to eat healthier and go vegetarian but I think I’m gluten intolerant, so I am looking for recipes that fit both of these criteria. Thank you for your help!

    I am mostly vegetarian and also GF, so I have loads of GF veggie recipes and recommendations on my blog at austerityandprosperity.wordpress.com

    It’s not as hard as it seems at first, leaving out both meat and wheat, but it takes some getting used to…

    My two daughters are vegetarian and we recently ate “socca” at a French restaurant. If you aren’t familiar, it is a thin, crepe-like garbanzo flour pancake. It was served flat and on top they layered sliced tomatoes and fresh mozzerella and drizzled the entire thing with lots of olive oil and basil. It was delicious and I immediately went home and looked up the recipe. It’s incredibly simple to make. I purchase Bob’s Red Mill Garbanzo Bean Flour (which goes quite a long way for about $4), mix with water and a little EVOO, and fry it in more EVOO in a hot pan. It doesn’t matter if it breaks up, as that only enhances the crispy deliciousness. Try it. I can almost guarantee it will become a staple as a bread or pancake-like substitute. The flour also makes good hummus.
