Shepherd’s Pie

  • 1/2 pound ground beef extra-lean
  • 1 onion chopped
  • 1 can tomato soup
  • 1 can green beans drained
  • 1 can corn whole-kernel, drained
  • 5 potatoes mashed or 6 servings instant potatoes
  • 1/2 cup mozzarella cheese part-skim, shredded

This recipe makes 6 servings.

1. Brown meat and onions. Drain well. Add soup to meat mixture. Layer meat and vegetables in a 2-quart casserole dish. Put mashed potatoes in mounds along the edge of the mixture, leaving a hole in the center to sprinkle the cheese on top.

2. Bake at 350 degrees for 30 minutes.
