Pineapple Chicken

Makes 6 servings

  • 3 chicken breasts, split, skinned and boned
  • Black pepper
  • Paprika
  • 1 20-ounce can pineapple tidbits drained, unsweetened
  • 2 tablespoons Dijon style mustard
  • Soy sauce
  • 1 clove garlic, minced

Arrange chicken in crockpot. Sprinkle with pepper and paprika. Mix soy sauce, pineapple and mustard together; pour over chicken. Add minced garlic. Cover and cook on LOW 7 to 9 hours or on HIGH 3 to 4 hours.

    I was about to make this, when I see there is no ammount posted for the soy sauce. should i make it thick, or saucy? how much juice runs out of the chicken to “water” this down? has anyone else tried this yet? what did you do?

    I think you could add about 1 1/2 to 3 teaspoons teaspoons of soy sauce. The
    dijon mustard may have salt in it. Soy sauce is full of salt and while a little salt is ok for you, a lot is not! You will have plenty of “sauce” from
    the pineapple (even though drained) and the chicken, so don’t worry about that.
