Homemade For The Holidays and Midwinter Epiphany

December 7, 2011

Editorial

Hello again and welcome to another edition of the Hillbilly Housewife Newsletter.

The countdown to Christmas has started in our house.  My daughter has the calendar front and center, as if we're going to forget!  I hope your plans are coming together for this holiday season.  I know that no matter what or how folks celebrate, it can always get a bit stressful, especially the closer we get to the day.  That's why I don't want you to miss out on this week's special.  Take a second to scroll down and check out a fabulous new resource that my friends at LivingOnADime.com have shared with me.  It's such a huge collection, and at such a great price, I didn't want you to miss it!

This week's featured article is about planning a simple cookie exchange.  As it gets closer to Christmas, we are all looking for ways to enjoy a less stressful holiday.  Combining two holiday events - making cookies and visiting with friends and family - into one event can really help with lowering the stress level! Be sure to scroll down and check out this article.

Every week in our recipe sharing section, we feature a recipe submitted by a reader. Please be sure to take a look at this week's entry. Also, please continue to submit as many recipes as you want each and every week to HBHW. We only ask that your recipes be YOUR recipes and not copied and pasted from another source. This is just a fun way to share recipes and to get your name mentioned here on HBHW.

This week's quote and story are both reminders of the what this time of year offers us, and what we have to offer during this time, as well.   Please take a moment to read and enjoy.

Those are my thoughts this week. As always, I welcome your comments and suggestions. Feel free to email me at susanne@hillbillyhousewife.com

Warm Regards,

Susanne - The Hillbilly Housewife

Frugal Bologna Sandwich Spread

I made this spread when my boys were small…we all still love it.

1 to 1 1/2 lb. bologna(store brand on sale is fine)ground in blender.
3/4 c. pickle relish (home canned if you have it)
3 Tblsp. minced onion
1 Tblsp. Worcestershire sauce
1/2 to 1 c. mayo-type salad dressing (to your taste)

Mix all, put in containers and store in fridge.
Serve on plain or toasted bread with lettuce.

Inspirational Story

Epiphany
~ Judith Bingham ~

Deep midwinter, the dark centre of the year,
Wake, O earth, awake,
Out on the hills a star appears,
Here lies the way for pilgrim Kings,
Three Magi on an ancient path,
Black hours begin their journeyings.

Their star has risen in our hearts,
Empty thrones, abandoned fears,
Out on the hills their journey starts,
In dazzling darkness God appears.
