Editorial

Hello again and welcome to another edition of the Hillbilly Housewife Newsletter.

I hope you had a wonderfully peaceful and joyous holiday week surrounded by family and friends.  We certainly enjoyed ourselves.  In fact, we're still digging out from under the leftovers!

As you probably know, our website has been a bit stressed lately.  We have encountered some issues and have worked diligently for the last couple weeks to tidy it up.  You may have seen warnings when you've tried to log in.  Yes, there is always a danger of some unsavory viruses finding their way in.  Even simple errors can cause big warnings.  Luckily, ours was a small, albeit irritating, problem. We believe we have rousted out the varmints, but will keep ever vigilant making sure we can run a safe and secure website.  If you see a few glitches along the way, you can be sure we are also tweaking those.

And now we are folding the extra tissue paper and figuring out what to do with all the goodies that Santa left under the tree.  But, as you know, Santa has been much more frugal this year so many of our gifts were more about "doing" than "having."  As a matter of fact, many of our gifts were more about planning for the New Year.  One of the things I look forward to is enjoying some REAL savings at the grocery store.  My good friends Tawra and Jill of LivingOnADime.com are definitely on the same page with me!  Keep your eyes open for an announcement in the coming weeks for a fantastic sale that will have you saving big money right off the bat.

This week's featured article is about planning a New Year's Eve party.  No, you don't need a ballroom complete with a disco ball.  You just need to provide food and fun for your party to be a success... no matter how frugal! Be sure to scroll down and check out this article.

Recipe Sharing

This is the spot we have chosen to highlight recipes shared by our readers. Rather than post my own here, I'll randomly choose a recipe from the ones we receive here at HBHW. I hope you'll give this recipe a try.

Corn Tortillas – Tortillas de Maiz

This recipe is very frugal as it only uses three ingredients – water, corn flour, and baking powder. A batch will last you a few days to a week, and these tortillas are a great healthy and cheap substitute to bread.

Here’s the recipe:

Here is my recipe for THE perfect tortilla. This recipe makes about 20-30 tortillas and can be doubled or halved if you desire to make more or less. Although tortillas are usually eaten with other food, such as meat, rice, or vegetables, they are just as good eaten by themselves as well!

Ingredients:

-3 cups of Instant Corn Flour treated with lime, (this flour is known in Spanish as “harina de maiz”. I use the “Masa Brosa” brand)
-5 cups of lukewarm tap water (agua tibia)
-1 tsp. of baking powder

Directions:

-In a large bowl, combine 3 cups of corn flour with baking soda and mix together.
-Add 4 1/2 cups of water and mix together with your hands until combined.
-Add final 1/2 cup of water slowly, mixing thoroughly with hands until fully incorporated.
-Pre-heat three or more nonstick skillets on high/medium high.
-Begin to form medium sized balls out of the masa with your hands.
-Place each ball of masa dough between two plastic baggies and flatten the balls by pressing down with a plate.
-Remove flattened dough from baggies and place onto hot skillet.
-Repeat process until all dough balls have been cooked – about 1-2 minutes on each side.
-Place cooked tortillas on metal wrack to cool.
