
- 2 cups rice (I use instant cause I can’t seem to cook the real stuff.)
- 2 cans of canned chicken (tastes best with chicken breast cut in cubes and fried, but cans are economical)
- 1.5 cup salsa
- 1 cup shredded cheddar cheese (optional if you can afford it, but well worth the expense)
Things that can be added:
- black beans
- corn
Things to top it:
- crushed tortilla chips
- sour cream
I don’t measure things, I just look at it and decide what and how much I want. This is great to cook for one person, or two. If I’m cooking for 4 that’s when I add things and put on toppings.

A great way to use up the last of a roast chicken! We added salsa con queso and guacamole on top – yum!
How do you cook this? Do you bake it in the oven or cook it on the stove?? Sounds tasty I just want to make it the correct way. Thanks!!
It would be easiest to use cooked rice, put together in casserole dish and bake but you could if using uncooked rice cook everything together in a skillet with water or chicken broth but that would take longer.
The recipe says the person can’t cook rice, you should check out thefamilyhomestead.com, she gives tips for cooking rice. Also with long grain brown rice depends on your burners temp variations. Directions on packages say to boil then reduce temp to low for 40 minutes. My burners go from 1 to 10. 2 takes much longer with adding water after 30 minutes. I’ve been cooking rice on 3 with adding 15 minutes longer. You have to play with it a little and I never buy canned chicken. That’s not frugal at all. Leftover turkey would work too.
I never could cook rice ethier until I found this recipie that told me how to cook perfect brown rice. It calls for 4 cups of water per cup of rice and bring water to boil add rice stir once turn heat down to simmer cover with lid boil 30 mins then drain turn off heat add rice back to pot cover again let sit for 10 mins after 10 mins remove lid and fluff with fork my hubby now says I make the best rice before mine turned out like mush
How about Baked Rice
Bake it in the oven. Do need to plan ahead…I can make two 9 x 13 glass casserole dishes of (brown) rice and then store in fridge & use as needed.
instead of salsa I used canned diced tomatoes & taco seasoning, a great way to use up extra rice & leftover cooked chicken/turkey
I like to layer the ingredients: rice, chicken, soup ;green chilies; sour cream, salsa and then cover with cheese. Serve with tortilla chips.
I don’t know if a rice cooker is hillbilly enough for you, but it sure is convenient. Put the rice and water in, turn it on and walk away. Brown rice, put in a little more water. $15-20 at Wal-Mart. Makes a great vegetable steamer too!
(I’d wait until after the rice was cooked to add the cheese and salsa.)
Yeah for rice cookers. I keep finding new ways to cook in it. One of my favorites is macaroni and cheese. So creamy and delicious! They are not expensive, picked mine up at KMart for about $17 and it is tied for first place in my kitchen with the slow cooker. Yes, you can live without a rice cooker, but I sure appreciate having one!
