- Reviewed in the United States on September 3, 2012Format: KindleVerified PurchaseTrust me, if you've never had homemade jams, jellies, preserves, marmalade or fruit butters, you've never really tasted them. Canning was something I learned as a very young girl from my mother, my grandmother and a host of their friends.
I still make some of my own jams and I now make excellent apple butter with almost no effort using organic no sugar added applesauce in my microwave. The store stuff costs five times as much and often has unwanted ingredients such as high fructose corn syrup. Those who are diabetic or just calorie conscious can make great spreads now using Splenda or other alternatives, but my family loves the apple butter with no added sugar at all.
In this book, there are recipes using pectin and those made with fruit alone and the Hillbilly Housewife carefully explains your options. (Less ripe fruit usually has more natural pectin but ripe fruit tastes better.) I would add that if you are reducing or substituting for sugar, it's likely that you will need to add pectin. If your batch doesn't "jell" she suggests you can use it as syrup or ice cream topping but she also explains how to add a little more pectin and cook a bit longer.
This book has freezer recipes that require no further processing while explaining beautifully how to use a water bath. I did find a bit odd that in her suggestions for canning jars she doesn't mention that a great many large supermarkets also carry them now.
Making jams and jellies is a fine activity to get your kids cooking and they will love the end product and be proud to serve (and eat!) it. You can make a much better quality product at home for far less money than the premium ones would cost.
This book is generous with tips for substitutions.My only disagreement is that she warns to "never" double batches. For real beginners this is not terrible advice, but we routinely made gigantic batches of whatever was in season with no problems. I can remember turning an entire bushel of wild plums into fine jelly.
This delightful book has been free over the Labor Day weekend but it is well worth the full price. Get it and try your hand at some yummy stuff. And you might want to check out her website and free newsletter for more recipes and frugal tips.

I am very pleased with the book and it's sure to be a helpful and wonderful source of information when I start making jams. I know nothing about making jam but after reading through this book, I really feel like I can do it. Not really so difficult looking after all.
The author also included interesting little stories to go along with each recipe. I really enjoyed it and have already shared on my Facebook Page.

The HBHW adds little snippets to most if not all the recipes about her childhood or her family. These snippets make the book even more enjoyable than if it were just recipes. Every recipe is presented with easy to follow instructions. I borrowed this for free for my Kindle with my prime account and, after reading through it, I immediately bought it! It's that good!
There are several "old" favorites that will have you riminiscing about your own childhood such as Fig Jam, Apple Butter, Crabapple Jelly, and Blackberry Jam as well as some "new to me" ideas such as Apple Jelly Made From Peels and Cores, Bacon Refrigerator Jam, and Zucchini Pineapple Jam plus "go to favorites" like Grape Jelly & Strawberry Jam. The list goes on and on so don't miss out on this delightful little recipe book!

Each recipe has a personal little anecdote written by The Hillbilly Housewife, which made me feel comfy and cozy, and like I was sitting in my Mom's or my Gramma's kitchen again. The recipes are simple and easy to understand, which I really appreciate! Jelly and jam making can seem so complicated, but this cookbook takes all that away. I'm digging out my old enamel canner again! As far as the actual Kindle book goes, I love the look of it, the readability, the ease of finding recipes with the clickable table of contents, and the simplicity of the directions. I love the way this is laid out, there are freezer jams, canned jams and some very unexpected flavors like a savory bacon jam that's kept in the fridge and served fresh. This is a great collection for people who enjoy jelly and jam making or are just getting started. There are also good, easy recipes that use fresh berries.
The information is laid out in a clear way and the recipes are tried and tested. She prefers using packaged pectin and using ripe fruits to using under-ripe fruits which is my family preference as well.

Simply, easy instructions with good explanations. For me personally, I like less sugar and i noticed all of these recipes are full-on sugar. I would have enjoyed a some low sugar recipes added in. Having said that, it IS a book of jams and jellies and i might just be a bit weird with the low sugar wish list. All in all, GREAT BOOK!

Being a big fan of HillbilyHousewife website (don't let being USA put you off, there are tons of info relevant to UK and loads of money saving tips and advice here) I knew it would be good! From what I need to how to use them to what else I could do and improve upon. All the recipes sound fantastic and I will be buying my first batch of fruit this weekend to try one out! Thank you for more money saving and tasty ideas.

It is often struck me that making your own jam is a lot of work and mess just to end up with something that I could have bought from the supermarket! But that's why I love this book. The recipes are completely different from ones I've seen in the past and they are completely worth the effort to make, especially since they're quick and fuss-free. My favourite is "Bacon Refrigerator Jam!" Delicious!
