Egg Sandwiches

As a young girl, my mother always made these. I was disgusted at the thought of eggs on a sandwich, and always turned my nose up. once moved out on my own, money was tight, and i decided to try it. boy was i surprised! they are absolutely wonderful and now that ive got kids of my own, they ask for them on a regular basis. thoroughly enjoy ~ fix your sandwiches how you like ‘em. if you want a slice of cheese, add it. if you like a slice of tomato or lettuce or onion, add it.

scramble desired amount of eggs in a tbsp butter.
spread mayo or miracle whip onto bread,
add scrambled eggs.
devour.

    This sounds a lot like the sandwich my mom made when I was growing up. The only difference is that we fry the egg (firm yolk) rather than scramble it. Like you, I disliked it as a child, but it is one of my favorite comfort foods now!

    I had these as a child. Mom would break the yolk and brown the whites. When my son started work, as boys do, he was always running late. I would make him a toasted fried egg sandwich and tell him to “Get going!” He wanted 2 one morning and later that day said he shared his “Get going” breakfast with a friend and his friend was going to have his wife make a “Get going” sandwich. We had them for breakfast, lunch or dinner. He likes his with mustard – yuck!:)

  3. Before having kids the hubs and I ate egg sanwiches often-even then money was tight and those sandwiches helped our growling tummies….we just made hard-yolked eggs on toast with a slice of cheese. I now prefer my eggs scrambled but remembering how those sandwiches tasted makes me crave one.

  4. my mother prefered her bread toasted, my husband prefers his eggs fried. ive accustomed myself to scrambled eggs and miracle whip on sunbeam bread……healthy, not really, satisfying….immensely lol

    Love these egg sandwiches on toast or bread. Ate them all the time as a kid. We would scramble the egg with hot Italian peppers and onions. (I am Italian) Sometimes we put leftover fried potato’s on them. Just so yummy!!

  6. OOOOhhhh, I am going to have to go make one of those now. I haven’t had one since I was a kid. My mom made them on homemade sourdough toast with miracle whip. Or she would mash up a few of the boiled eggs that she was making deviled eggs with while they were still hot with butter, salt and pepper and put them on toast. So good!

  7. I grew up eating these and still eat them often. So good, and so cheap! I make them the same way I ate them growing up. Whole-wheat sandwich bread spread with a little miracle whip to start with, and here’s how we make the eggs for the sandwich: Heat a small frying pan with a little butter (I use olive oil sometimes, now) in it while you prepare the bread and beat the egg. I just crack the egg in a bowl and beat it well with a fork. Then dump the egg into the hot greased pan. Salt and pepper, and when the first side is done use a spatula to flip the egg “patty” over to finish cooking. Then just lay the egg on the bread, top with the second slice of prepared bread, and eat!

    I also get whole-wheat english muffins sometimes to use for this. I toast the muffins, maybe butter them lightly, add one slice of cheese and the egg. If I’m making the sandwich on an english muffin, I use the fork to lift up the beaten egg a little while it’s cooking so it isn’t too big for the muffin. Like scrambling only don’t chop it into bits. I like these homemade “egg McMuffins” better than the Golden Arches, and you can add a slice of bacon or deli ham if you want.

  8. Here in South Texas, scrambled eggs along with potatoes, bacon, or whatever else, including tomatoes, cheese, onions, jalapenos, etc. are put on a flour tortilla and rolled up. There are called breakfast tacos…beans, cheese and bacon are my favorites though I’ve had tortillas with spam, potatoes and scrambled eggs with garlic and onion….I’m getting hungry

  9. Loved fried egg sandwiches when I was kid! Now my husband fixes them but he calls them “A Mess”. They have a fried egg with the yolk left runny, a piece of fried bologna, and a piece of kraft american cheese on them. YUMMYYYYY!!!

  10. I had one with a fried egg this morning! We had them as kids all the time just as you said! :) My husband wrinkled his nose the first time I made them, but now he loves them and sometimes asks for another one! Lol I was considering making them for a fast bfast before we go shopping in the morning. I think you just talked me into it! ; )

  11. We have always eaten egg sandwiches, I like mine with a little mayo,grated onion, pimento,black chopped olives and cheese, Yummy

  12. My kids won’t eat mayo, so their egg sammies are dry. But we toast the bread, laying a peice of cheese on top to melt while toasting in the toaster oven. Then top that w/ hot egg. We also add a couple strips of bacon, or a couple slices of ham to round out the flavors. Good any time of day!

  13. My mother used to make me fried egg sandwiches to take to school for lunchtime when she ran out of other things to make sandwiches with. I like them allot back then but she did use allot of ketchup and mayo on them and I now like them without the ketchup. I have never tried a scrambled egg sandwich but I plan too after reading this. Thank you.

  14. I’ve also enjoyed egg sandwiches throughout these past few years! When I lived in Spain, my host mom would make sandwiches for supper a few nights a week, but she made a hot ham and cheese style sandwich with turkey, egg, cheese and whatever toppings (lettuce, tomato, etc). Delicious! My husband and I call them kick – @ss sandwiches because they’re just good!

    I butter the outsides of the bread, make the sandwich (layer of turkey, tomato, lettuce for me) and add cheese. After frying/scrambling/cooking the egg, I add it on top of the cheese so it melts and then put the whole sandwich back on the stove to grill the bread. Yummmmmm!

  15. We like ours with fried eggs. Just before the eggs get turned the first time, we break the yolk and sort of spread it around on the whites. Season how you like (Hub sometimes tops with a little chili powder). After you flip, top with cheese (the only thing we use American for).

    Our assembly looks something like this:
    Toasted bread, mayo (never miracle whip ), a tiny bit of mustard, egg with melted cheese, more mayo spread toast.

    If we have garden tomatoes, Hub and I add those atop the cheese but the kids eschew an vegetable addition.

  16. We called ours a Western Egg Sandwich, even though we lived on the East coast. It’s like making a plain omlett. Mixed up egg, milk and salt and pepper. Cook it on the one side then flip it over when ready to the other side. Serve between two slices of bread with some ketchup on it. I know what I’m having for dinner tonight.

  17. My dad used to make something that he called “denver sandwiches” or “westerns”. He would first saute finely diced ham and onion in a skillet, and add small bits of green peppers to it. I think he poured in beaten scrambled egg mixture, and cooked it fast, without stirring, and would flip it like a pancake. I was the kind of kid who hated everything but milk, but these were delicious on bread spread with mayonaise.

  18. I love these, too! Sometimes I fry the egg and put it between 2 pieces of hot, toasted, buttered whole wheat bread, add a slice of cheese; sometimes I nuke the egg. I’ve never tried it with scrambled eggs, but oh yum! I will try that very soon! I’ve also rolled my egg and cheese into a soft tortilla with salsa! So good!

  19. The Egg Sandwich will live forever. My mother also made them for us too! I loved it then and I love it today. Now I make my egg sandwich with wheat bread. It tastes even better to me.

  20. When we were kids mom used to make us egg sandwiches. She would fry the egg and leave the yolk a tiny bit soft. Put it between two slices of buttered toast and also add bacon. These would tast so good on a chilly morning as we walked to school. We had to walk 2 miles but no snow. LOL

    Then we also loved warm sliced egg sandwiches. Boil your eggs and as soon as they are done, peel and slice them on bread with mayo. Sprinkle on some Morton’s season salt and yummo. Add tomato and lettece or whatever else you may like. I like mine plain and they are comfort for me.

  21. I love egg sandwiches, and so does my husband. His job requires him to travel a bit some days. When he has to leave early for work I make him an egg sandwich, an egg cooked on a griddle with cheese on toasted wheat bread. Other times I use two small pancakes, I put a little sugar free syrup on the inside of the pancakes like a condiment, it soaks in. I put an egg and a piece of cheese between the two pancakes, makes a great breakfast sandwich for him.

  22. When growing up my Mom and Dad would cook fried egg (yolk hard) sandwiches for us. I prefer mine on untoasted white bread with small amount of butter. Totally unhealthy but oh so good. On tight budget weeks I’ll bring that to work with me and “scramble” the egg in a mug and I’ve got a hot sandwich.
