Non-Dairy Caramel
1/2 cup brown sugar packed
1/2 cup white sugar
1/2 cup non-dairy creamer (I use Coffee Rich)
2 tablespoons non-dairy margarine (like Best Life stick)
6 to 10 regular size marshmallows
Put all ingredients except marshmallows in a medium size sauce pan and heat on medium heat until it starts to boil and sugar is melted. Remove from stove and add marshmallows and stir until melted. May leave on low heat if you have trouble melting marshmallows.
Cool and store in refrigerator. Might have to warm in microwave to soften up caramel. It depends on how many marshmallows you use.
