i have recently gotten hold of alot of brie and baby brie cheese. does anyone have any idea of what i can do with this cheese? i have done searches on the internet and most recipes are for appetizers. any ideas would be greatly appreciated!! Thanks

As far as recipes, betcha you could find a ton online, but my advice would be to freeze a few chunks… I do believe that you can freeze cheese up to a couple of months. Would give you more time to figure out what to do with it all!
Also maybe donating some to a soup kitchen if you have a huge amount. Have a great day!
Brie is wonderful when melted into creamy soups. It’s especially good in seafood type soups… Cream of Shrimp… yum!!
Brie works well to melt with other cheeses, in fact, it helps smooth cheddar cheese out. You might want to try it in a Mac-N-3 cheese type casserole (use any mac-n-cheese recipe but blend the cheeses the way that seems right to you).
Regarding the appetizers…
My family finds it fun to use appetizers for a meal. Brie wrapped in crescent roll dough and baked, mini pigs in a blanket, spinach dip and veggies, etc. You can make a fun, filling and nutritious meal. I also have done appetizers for the main course and regular dinner-type sides like mashed taters, steamed broccoli, applesauce for dinner. My family loves it when meals are out of the ordinary.
Panini with Chocolate and Brie
•12 slices sourdough bread
•1/3 cup extra-virgin olive oil
•12 ounces brie cheese , thinly sliced
•1 bag (12 ounces) semisweet chocolate chips
(Optional) •1/3 cup thinly sliced basil leaves
Preheat griddle
Brush both sides of the bread with olive oil. Grill the bread slices until they begin to turn golden, about 1 to 2 minutes. Remove from the grill and place 2 ounces of cheese on 1 slice of bread (the bottom half), top the cheese with 1/3 cup chocolate chips and a sprinkle of basil. Top with another slice of bread. Continue with the remaining sandwiches. Return the sandwiches to the panini grill until the chocolate begins to melt, about another 2 minutes.
Super yummy!
Toasted Apple Pecan Brie Sandwiches
3 tablespoons butter
4 Granny Smith apple – peeled, cored and sliced
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 cup chopped pecans
4 slices sourdough bread
2 tablespoons butter
6 ounces Brie cheese, cut into long, even slices
1 pinch ground cinnamon, for dusting
Melt 3 tablespoons of butter in a large skillet over medium heat. Add the apples; cook and stir until tender, 7 to 8 minutes. Stir in the brown sugar, 1 teaspoon of cinnamon and pecans and continue to cook for 1 to 2 minutes longer. Remove from the heat and set aside. Preheat the oven’s broiler.
Cut the slices of bread in half if they are very large and toast lightly. Spread the remaining butter on to one side of each piece of bread. Place two slices of brie cheese onto the unbuttered side of each piece of bread. Top with a generous scoop of the apple mixture. Place the open face sandwiches onto a baking sheet.
Broil until the cheese has melted, about 1 minute. Sprinkle with additional cinnamon if desired.
Were I in your lucky shoes, I would mix it with other cheeses and make fondue!
You can also bake it in a puff pastry crust, with some preserves or chutney spread on top. Yum!
We love it on a toasted english muffin with some ham and an apricot spread.
