Bread Machine Corn Bread

  • 1-1/2 cups water
  • 2 teaspoons salt
  • 2 tablespoons margarine
  • 1/3 cup sugar
  • 1/2 cup dry milk powder
  • 1 cup yellow cornmeal
  • 3-1/2 cups bread flour or all purpose flour
  • 2 teaspoons active dry yeast

Measure the ingredients into the bread pan in the order listed. Make a well in the flour and sprinkle the yeast into it. Set the machine to it’s Basic Cycle. On my machine this lasts for 3 hours. Press Start, and let the machine work it’s magic. Remove the cooked bread from the pan after baking and allow it to cool before slicing.

Folks who prefer their cornbread sweet, will love this recipe. Hearty enough to accompany spicy foods like Chili, this bread is still refined enough to serve to the Preacher and his wife when they come for Saturday night Supper. My boys love this bread with meals, although they don’t always like it for sandwiches. Personally, I think it makes fine sandwiches, serving especially well as a base for Sloppy Joes.

    Can I use 1 1/2 c. of milk instead of water and powder cuz I’m trying to use it up ? The oatmeal bread is great by the way !

    Very excited to find a Corn Bread recipe for my breadmachine. I had fun with this recipe by adding another cup of corn meal and tablespoon of gluten. I put in 2 1/2 cup flour instead since I added more corn meal.

    Mine came out more like bread and less like cornbread. Didn’t care for it. Could it be that I used milk instead of water+dried milk?

      Yes. I took a chance- I didn’t have cornmeal- used a box of jiffy cornbread mix- along with the flour, and the other ingredients -it came out just fine. Excellent for a snack bread with soup,chili and toasted with marmelade for breakfast. Thank you

    This recipe reads well and the bread has a nice yellow color, but it doesn’t taste at all like cornbread – just a decent white bread. Not worth making again.

    Can’t believe some of the comments/questions here. It’s a RAISED BREAD, of course it’s not like quick bread corn bread. It’s wonderful–the texture is fabulous and reminds me of a bread I buy at my local farmers’ market called Italian corn bread. I may make it like that next time. Let the machine do the mixing and kneading, then bake it in two rounds on a greased pan.

    Made two small changes. I never use margarine, used real butter, and cut the sugar to 1/4 cup. LOVE it! Oh, and I always get white corn meal, so the color was more like oatmeal bread.

    PS: cornbread mix is not cornmeal–it has other ingredients in it.

      Me too- It reminds me of squaw bread in texture– I also can’t believe the comments either- the author states it’s not a corn bread- but a bread machine corn bread—
