Does anyone have a recipe for homemade bouillon, maybe salt, herbs, and dried celery ?
There are some vegetables I can’t eat and the factory produced ones always contain some of them.

HTH
If the person looking for homemade bouillon recipe is still interested I recall that there is chapter in a vegan cookbook written by Abbot George Burke ( Simply Heaven! on Amazon ) that was invaluable when I was catering vegetarian lunches. His “flavoring broths” rely heavily in MSG, I just left it out. As written; Unchicken Broth: 1/4 cup chopped onion (I often used 1 tbsp. dried) 2-1/4 tsp MSG (omit!) 1/2 tsp. sea salt 1/2 tsp. poultry seasoning 2-1/2 Tbsp. Nutritional Yeast, 1 tsp. corn oil, 2 cups water, combine and simmer 5 minutes. I often added a few celery leaves if i had them, a few pepper corns, and a dash of granulated garlic because that’s the way I roll. Good luck.
This is an option also for the person requesting a homemade version.
It was not listed as to what veggies could not be consumed, but what I use in my kitchen and foods is a product that I purchase by the case from the my local health food store.
I have had cancer and was put on this product by my oncologist. It is vegan and contains vegetables and nutritional yeast and herbs. Again, this has veggies in it, so I will suggest the person look online about this product.
It is made in Germany. The name of the product is Seitenbacher Vegetarian Broth and Seasoning (available on Amazon.com). Please look online by the name of the product. Then you can look up ingredients to see if it will cause problems. I use it as I cannot use or have MSG or chemicals because of my past cancer issues.
It is somewhat expensive, but again, I purchase it by the case of 6 to a box. I store it in the freezer by sealing the cans in with a vacuum sealer and store in the freezer. I have just used the last can and that was 5 yrs ago and is still fresh and good. I usually get this through my health food store, but you can I am sure purchase it online. Again, do a search by the product name.
I use this as a base for all of my cooking and sauteing. Meats, veggies, soups, stews. It is an all round product and I swear by it. I also make my own version of a bouillion by mixing leftover veggies, and mashing them, an mixing a few tablespoons of this product in with the mash and then laying it out on my dehydrator’s roll up plate. It dehydrated well and you can break it up and store in the freezer in freezer bags or a freezer container
I hope that this may help. It is hard to find products that can be used.
