Applesauce Pancake Topping

- 1 cup unsweetened applesauce
- 1/4 cup concentrated apple juice
- 1 teaspoon lemon juice
- 1/4 teaspoon cinnamon
In a small pan, over low heat, combine all of the ingredients. Simmer briskly for 5 minutes, or until thickened. Be careful not to burn it. Serve hot on pancakes or waffles. Makes 2 servings. Recipe is easily doubled or tripled.

I love this. I have been using warmed applesauce with cinnamon for pancakes and waffles since my boys were small. It all started one day when I was fed up with bad behavior and decided it was sugars fault. I just heated some unsweetened applesauce with some cinnamon in a pan and that is what we used. They still love it to this very day. This sounds like it would be a real treat with the apple juice added. Can’t wait to try it.
